Add tests for each mapping in mapping.json

These are more like integration tests than unit tests; but each test targets only one mapping (as a larger example cannot trigger every one). Each test should:

• set up an RO-Crate from the template that should trigger one mapping
• apply the relevant mapping from the JSON
• confirm that the output in DataCite is as expected
