Wrap fileHeader related formatting options in Formatting.fileHeader prop

Right now it's a bit awkward passing the fileHeader specific "formatting" options.
There's a formatting property called "prefix" but that's also an option within the fileHeader options. Same for lineSeparator.
It would make sense for these options not to get magically merged/reused and to be scoped appropriately.
