Are there any plans to add support for the desktop platforms supported by Flutter? i.e. macOS, Linux and Windows.

I do not have, but it is welcome to create PRs.
I'm not sure how we can detect the Dart VM websocket Android/iOS do in https://github.com/appium-userland/appium-flutter-driver/tree/main/driver/lib/sessions. Maybe like Android and iOS, appium-mac2-driver and windows-driver will help like uia2 driver for android and xcuitest driver for ios.
