[Feature Request] Set arbitrary value for `virt_text_offset` instead of just off by 1

It would be helpful to be able to set any integer value for the virtual text offset. For example, in the render-markdown plugin I'm using, the triple back ticks that closes a code block will be automatically hidden when cursor is not on it. If the virtual text covers it, the output will also be hidden. Having an offset of 2 or 3 would likely solve this.

In the meantime @sghng, it looks like you are using MeanderingProgrammer/render-markdown.nvim. You can set

local opts = {
  conceal_delimiters = false,
  border = "none",
}

And it will disable the hiding of the bottom backticks such that the output of the kernels can still be seen.

The only issue with this is that images do not seem to respect the virt_text_offset.
