Template escaping and security

We should probably add a section to https://docs.contao.org/manual/en/layout/templates/ that describes all functions available in a template on $this->.

Including the new methods from contao/contao#3110

Maybe the 5.3 LTS release would be a nice time to revisit this? 😇
