Add OpenTelemetry to Services and ProcessWorker

Description

It would make sense to add OpenTelemetry to get some detail information about the metrics of the application

Acceptance Criteria

• Define metrics which are needed
• Add and configure OpenTelemetry for Webservices
• Add and configure OpenTelemetry for ProcessWorker

My recommendation would be the use of OpenTelemetry.Instrumentation.AspNetCore & OpenTelemetry.Instrumentation.Http
