Update to version 23.1 added more permissions without documentation

Hi,

Thanks for this flatpak (as well as the original software), I 've been using it for years and I am pretty happy with it!

In cd37315, --device=dri was changed to --device=all. I don't see anything to point to the why, either in that commit, the flathab repo as well as the changelog in https://github.com/Stellarium/stellarium/releases.

Is this increase in permissions justified somehow? If yes, can I have a pointer to something explaining why? I can offer to submit a PR to document it. I can also post an MR to switch back to --device=dri, if not.
