Add postgres as default DB in the docker compose for production

I've followed the installation guide and this uses the SQLite by default and there is minimum information about the postgres/redis planning.

I'd rather just get people to use postgres by default and SQLite in development.

I've just installed using the "installer".. and I'd love to see postgres and redis setup during that process.
