Stats on the hub main page is a little outdated or does not include other Galaxy instances

The new Galaxy Hub page is really cool! Excellent work!

I noticed that some of the stats on the main page either is outdated or not include "all" Galaxy instances. I think for more recent information we could leverage the data from the KUI dashboard.

I think I pulled those from gxy.io/infographics, but attaching it to KUIs is a great idea. This could even be automated w/ a nightly github action (or however frequently KUIs run).

Each participating Galaxy node pushes the KUI metrics once a month (I think in the 1st week of the month).
