Q1 project: Reflect new product messaging in the docs (change docs structure to reflect new categories, elevate the deployment type decision to the top level, change individual product terms)

Working with Eddie Glenn (@eglenn-teleport) on this.

Marketing requests adding distinct 'Getting Started' pages for Teleport Access and Identity, and linking them on the Introduction page, like what we have in place for Teleport Policy.
