pyproj bug

We should sort out whether this is a problem with how PyProj is being installed by pip as a regionate dependency.

Anecdotally, I've had problems with PyProj installations before, but usually building a conda environment from scratch has fixed it...

May be related to the fact that both proj (a C/C++ library) and pyproj (a python package that uses proj) were being separately specified as deps. It is possible that this meant we have two versions of proj lying around and causing problems.
