I'm about to start baking, but just noticed that at the end of the baking section, under "Conclusions", there's a table there and a paragraph that says to turn OFF the fan when using a convection oven without a dutch oven. I'm assuming this is because the fan forced oven mucks around with the steam.
I'm wondering if this - or at least the table - should be higher up under the "10.2 The role of steam" section.
That means that a reader will:
- whilst reading about how important steam is
- will see that there is a table about what sort of oven they have, and therefore what method they can use
(And mebbe a new column for comments/link that goes directly to the section that references the sort of tool they have.
Which also means new sections, one for the inverted tray method (which already exists), AND one for the dutch oven. All of which get much fiddlier, so mebbe not)
For context, I'm in Australia, and our ovens tend to be electric + fan forced, and pretty much all Australian recipes go "turn on your oven to 200deg (or 180 if you have a fan forced oven)", so I kinda assumed that the 230deg meant "230deg or 210 if fan forced".
I'd be curious to hear your thoughts?
