Egg Cups

  • 6 eggs (optionally use half egg whites, 150g)
  • 1 cup half and half or milk
  • 3 oz cheese
  • 1 sausage
  • 1/2 bell pepper
  • 1/2 jalapeño
  • 1/2 onion
  • mushrooms (optional)
  • salt
  • pepper
  • garlic powder
  • onion powder
  • basil
  • marjoram
  • sage
  • 12 wonton wrappers (optional)
  1. Preheat oven to 350°F
  2. Saute onion, sausage, peppers and mushrooms, let cool
  3. Combine all ingredients, season generously
  4. Spray muffin tin with spray oil and fill 3/4th the way up. If using wonton wrappers, line tin with wontons and spoon in 2 tbsp of mixture in each
  5. Place directly on the rack. Bake for 15-20 minutes with until eggs are set and puffed up
