- 6 eggs (optionally use half egg whites, 150g)
- 1 cup half and half or milk
- 3 oz cheese
- 1 sausage
- 1/2 bell pepper
- 1/2 jalapeño
- 1/2 onion
- mushrooms (optional)
- salt
- pepper
- garlic powder
- onion powder
- basil
- marjoram
- sage
- 12 wonton wrappers (optional)
- Preheat oven to 350°F
- Saute onion, sausage, peppers and mushrooms, let cool
- Combine all ingredients, season generously
- Spray muffin tin with spray oil and fill 3/4th the way up. If using wonton wrappers, line tin with wontons and spoon in 2 tbsp of mixture in each
- Place directly on the rack. Bake for 15-20 minutes with until eggs are set and puffed up
