chore: Update provider events handling (#104)

* Use latest blobs

* Use new provider events

* Simplify progress and add extra fn for handling per request progress

sadly we need a direct dep to irpc fo this!

* chore: update to the latest version of `iroh`, `irpc`, and `iroh-blobs`
