make separate dev/stable channels

i should've probably started with a stable branch instead of the default master - it's a bit too late now.

so, mention explicitely that master branch is the prod/stable channel and create a dev branch. describe how updates get from the dev into master.

partially done in 35f8734, just need to write it down in readme.
