The only way to sort student's assignments by student names is to switch to the Student tab, sort student by names and go back to the assignment tab.
This is not documented and is not indicated in the course interface.

It should be possible to sort student of an assignment directly in the assignment list as can be done in the main student list.
Additional context
This would simplify entering grades in other systems and remove this (minor) annoyance.
