Oral History, do OCR on PDFs with no text

Will allow us to create HTML transcripts from PDFs, as well as cite with page numbers in AI. @dcaruso-scihist suggested we could OCR these.

We could just do it one by one in interactive software, using either licensed Adobe Acrobat (via Citrix), or MacOS Preview, whatever works.

This is a list of those that are "really free access" -- there are a few more in more restricted statuses that I haven't yet recorded in a list.
