GitLab smoke test - re-enable when they have updated their Gemfile

It's currently commented out in .github/workflows/smoke_tests.yml → matrix, and we'll uncomment it once https://gitlab.com/gitlab-org/gitlab/-/issues/522903 is completed.

Filing this as a reminder for our future selves.
