Tidy up console outputs

Feature Description
Currently, a lot of information is logged to the console. Debugging information should not be logged and OpenSim processing information should be written to a separate file (/already is). We should only be logging a simple summary of the fitting process with associated metrics, errors, warnings.

Use Case
To make it easier for the user to read important information and identify any errors, warnings, etc.
