Have been using the offboarding tool for quite some time now and it has been an awesome tool for admins for decommissioning devices.
It is more a query, if Intune Multi Admin Approval is enabled, will this break the flow process or how does the offboarding manager tool handle this, if it even can?
Anyone have experience with this yet maybe?

I have the same question. We're about to implement multi admin Approval.

It still works, tested and validated after enabling MAA.
MAA must be only a GUI control, I would recommed locking down the Registered app service principal for the offboarding tool to be only used on certain locations/compliant devices etc.. via CAP.
You will need some workload identity licenses for this to be able to leverage this additonal layer of security in a CAP for Service Principals and also use the CBA method as opposed to the client secret if using this.
