User story:

As a person who knows how to set up a Postgres database, I want to be able to test and deploy VizHub backed by Postgres not MongoDB Atlas, so that I can run the whole stack on open source, and not need to pay for MongoDB Atlas or use MongoDB at all.

First pass is here but that's mainly from GPT-3.5 I think and is totally untested.
