Can we get the Teams pages as sub bullets on the lefthand nav bar?
Additionally, can we true up the formatting of the subpages in this index page, to the 2 col table format that it has now?

Yes we can. It just needs someone to go in and do it. I also like the those "2 column layout" pages - I think it is the cards plugin in Sphinx that does it. Need to find plugin or formatting to make that happen in mkdocs.

Again, not sure this is needed for MVP but it can't stay this way. Thoughts?

no further thoughts, no. layout is not my thing and further I know nothing about mkdocs 😬
