Add tests to Verify WireMock 3 official image compatibility

Summary

Once wiremock/wiremock-docker#62 is released, we should add integration tests for it to the pipeline. New tests must be implemented for the 3.x features

Scope

• Add integration test for wiremock/wiremock:3x
• Update documentation to mention compatibility with the release
