Fix state-space pose/state estimator docs

[calcmogul]

The state estimator class it mentions doesn't exist. Those docs should be removed, since we have no plans to add that class. We removed it from the initial estimators PR because it was too specific.

We also don't describe what a standard deviation is quantitatively, so readers have no clue what values to plug in.
