What does this PR do? What is the motivation?

Remove the samples for the HPA autoscaling/v2beta1 options to clean up and simplify the steps leaving only the autoscaling/v2 configuration.

For reference, /v2 was added in Kubernetes 1.23 and /v2beta1 was deprecated in this version and removed in Kubernetes 1.25. Kubernetes 1.25 is pretty old by now and for major distributions:

  • AKS ended support 1.28 in Jan 2025
  • GKE ended support 1.26 in June 2024
  • EKS ended support of 1.25 in May 2024

So should be fine to remove, pretty much everyone should be on one of these versions, or at least using the /v2 structure.
