Thanks for the contribution, @jennmald!
I suggest we add a simple CI workflow which tests the pixi setup to make sure we capture all dependencies correctly. Once we add tests to the repo, we can plug them into that CI workflow later. For now we can just do pixi install and pixi list to check the list of packages. Maybe some other spot checks.
