Updates the badges and links in the README, in particular adding a link to the stable docs. We should probably fix #61
before merging this so it actually points to the right thing, but I can't for the life of me figure out why none of the workflows are triggering for the releases. In any case, #61 is the motivation for doing this, since we might have noticed this sooner if the link was there.
