The quality of the output website UI didn't quite match the quality of the content itself. This PR resolves that by moving the content into a Nuxt UI Pro backed docs website.
Outside of some minor structural changes, no edits have been made to the content.
Note that this won't prod-build yet 🙂 Just wanted to open the dev branch so folks knows it's in flight. Don't be scared by the large number of 'deletes'. My refactor strategy is always new foundation → paste in what we're keeping → ? → profit. The number of deletes will decrease once all the stuff has been moved back in 🚀
