This PR updates the EDM version used in test workflows to the most recent version, EDM 4.1.1.
It also updates the
setup-edm-actiontov4.1: thev4version doesn't know about the new URLs for recent EDMs.Finally, we also remove
macos-latestfrom the test matrix, since we don't currently have all the necessary EDM packages available on Apple Silicon (and the current workflow is only working with Python 3.8, where an Apple Silicon runtime won't be available).
