v1: Prepare 1.1

This PR is for preparing 1.1 release. Versioned bumped due to new feature added in the form of event naming (thanks to @SeWaS❤️).

This PR also does some house cleaning in preparation

• Move the pipeline into one file instead of having two almost identical files
• Starting on doing "proper" SemVer with more manageable patch numbers by restarting at 0 for every feature release
• Minor updates to the release notes and documentation related to the latest feature
