Escapes special characters in originate variables

Addresses an issue where special characters in enterprise channel variables were not properly escaped in the originate string.

• Ensures that characters like '' are escaped to prevent parsing errors or unexpected behavior in FreeSwitch.
• Adds a new extension method to escape values in a dictionary.
