Upgrades to be compatible with Ruby 3

  • Updates gems
  • Moves Despamilator::Subject::Text from a subclass of String to a module with methods. Inheriting from String is discouraged since methods that modify self no longer return the subclass, but String
  • Adds .ruby-version
