Renames ruff_lsp to ruff.

Quoting @okuuva from: folke/neoconf.nvim#114

Even though lspconfig still supports ruff_lsp and will continue to do so until further notice, ruff-lsp is astral-sh/ruff-lsp#520 in favour of ruff. The native LSP has been stable since ruff v0.5.3 which was released in July 2024 so it makes sense to support that out of the box instead of the deprecated standalone version.
