chore: remove unusued GitHub workflows

Update October 13, 2025: changed to "remove unusued GitHub workflows" (as per request)

In all honesty, we should either delete these workflows or disable them entirely - this repo doesn't have GitHub Actions enabled, and i imagine we would want to use different workflows than the ones we've currently inherited from GitHub-Flavored Markdown. Can you update this PR to delete these files instead?
