@ctauchen We bumped up the Elasticsearch and Kibana versions to 8.17.1 and made a few other version updates. (I saw multiple version entries, so I made sure to update to the latest 2.x version for 3.19 and 3.20.)

Also please update the version in the release notes

We've updated Elasticsearch from version 7.17.25 to 8.17.1. Since this is a major version update, please follow Elasticsearch's recommendations to take necessary snapshots before upgrading to this calico enterprise version. For more info -

@ctauchen, I was under the assumption that we would be cutting the 3.21 enterprise version from master or main calico-enterprise, but Today i observed it was based on 3.19 (maybe). I’m asking because, since I hadn’t seen the 3.21 enterprise version before, I updated all the Elasticsearch/Kibana versions to 8.x.x in the main docs folder. However, I still see that it has the 7.x.x version information.
